Whole30 Baked Apples

whole30, whole 30, whole 30 desserts, whole 30 recipes, whole 30 sides dishes, whole 30 applesHey friends! I am on day four of my second round of the Whole 30 program! So far I am feeling pretty good aside from the mild headache and fatigue which is right in line with the description provided in the program.

I was able to stick with the meal plan thoughout the week, and have felt pretty motivated by the results I am seeing only 5 days in… including less bloat and improved digestion.

Mike and I have been eating 3 meals a day, but we occassionally need a snack to get us through the afternoon.  Our days tend to be pretty long, and the gaps between meals results often in extreme hunger (especially with our workout schedule).

One recipe we’ve been working on since the last round is our sauted apples.  Check out this recipe and be sure to share.

Ingredients
1 1/2 tablespoon of coconut oil
4 large (6 small) red apples (we use gala)
dash of cinnamon
2 tablespoons of apple cider
1 splash of apple cider vinegar

Directions
1. Melt coconut oil in a skillet and add apples.
2. Add apple cider, and cinnamon cook until apples are soft over medium heat.
3.  Add a splash of apple cider vinegar to make the flavor pop right before serving!

This goes well with the Whole30 walnut crusted pork! More great recipes are in the cookbook!
