Peach Mango Salsa

I love perusing different websites for new recipe ideas, but I really need simple.  I definitely am not a cook, and usually if there are more than about 5 ingredients…I get overwhelmed.  But, call me greedy, I NEED my food to taste amazing!

One of my all time favorite recipes is peach mango salsa.  I absolutely love any salsa as an appetizer before a party or just casually sharing with my hubby for an evening snack.  And salsa always feels like a cheat, but it’s not at all!

So this recipe you can enjoy with some tortilla chips (or just a spoon)!

On another note, I usually like my salsa with an adult summer beverage in hand.  This year a strawberry mojito shakeology will do just fine!

Ingredients

2 peaches, peeled and chopped
1 mango or pineapple, peeled and chopped
1/2 cup chopped red onion
1/4 cup diced tomato
1 jalapeno, seeded and finely chopped (Mike prefers the seeds in the salsa, but you’ve been warned!)
1 teaspoon fresh lime juice
1 tablespoon EVOO
1 TBL fresh cilantro
Salt and freshly ground black pepper
A splash of lemon juice

Now What????

Toss all the fruit and tomato, onions, jalapeno, lime and lemon juice juice, oil and cilantro together in a large bowl. Season with salt and pepper and refrigerate at least 1 hour before serving.

I find that when the fruit is under-ripe, you should toss with some lime juice and a sprinkle of stevia. Set aside to for about 15 minutes before adding the other ingredients and refrigerating.

You can totally play around with this recipe by adding strawberries, kiwi, raspberries, or any other citrusy fruit!

Oh!  And I usually serve this with Food Should Taste Good Tortilla Chips (try checking the organic section) but I have been known to indulge with just a spoon!

    Tonight I'm serving this with grilled pork roast. Not my 1st choice of meat, however, kids dislike fish and this is the perfect summer topping to my not so favorite choice of meats.
