Hearty Beef and Butternut Squash Stew #21DFX Approved

I cannot even begin to tell you how cold it’s been in Pittsburgh! Kiddos have been off school for days because of the freezing temps! To me, there are few things more soul satisfying than some serious comfort food. 

Mom’s homemade broccoli cheddar soup in a nice bread bowl?  Yes, please!  However, I am making every effort to not give into these cheats throughout my 21 Day Fix Journey, so instead of focusing on what I cannot have, I am focusing on satisfying my cravings for soul food with recipes like this one! 

I will be honest…
I didn’t think it looked that appealing.

But this is an absolute crowd pleaser! 

*Note:  I did make some changes from the original recipe.  What can I say, when I want home cooking, I have to add a little Ursta to the mix! 

This recipe, if you are following the #21DF or #21DFX is:
1 RED
1 GREEN





Ingredients
1 TSP olive oil
1 1/2 pounds of raw, lean beef stew meat, boneless and cut into 2 inch cubes
1 medium onion, chopped
1/2 green pepper, chopped
1/2 red pepper, chopped
4 garlic cloves
2 medium diced tomatoes
1 cup low sodium beef broth
1 bay leaf (I did not have this available)
1 TSP Sea Salt
1 TSP Black Pepper
2 cups cubed butternut squash (you can buy this cubed in most grocery stores)
1/4 cup chopped fresh parsley
“Urstafied” by adding about a 1/2 of dry red win

Comfort Food After Snowman Building!? Yes, please!

Directions
Heat oil in large sauce pan over medium heat.
Add beef; cook, stirring frequently, for 4-5 minutes, or until the beef is brown.
Add onion and bell peppers; cook, stirring frequently, for 4-5 minutes or until onion is translucent.
Add garlic; cook, stirring frequently for 1 minute.
Add tomatoes, broth, bay leaf, salt, and pepper. 
*Add wine here if desired.
Bring to boil. Reduce heat to medium- low; cook, covered, for 40 minutes
Add squash; cook, stirring occasionally, for 8-12 minutes, or until sauce has thickened and beef is fork tender. 
Remove bay leaf; serve topped with parsley!

Serve.
It’s the perfect treat after an afternoon of building snowmen!
