12 Days of Christmas Cookies: Thumbprints

Ever notice that Thanksgiving is all about the pies? Pumpkin, apple, pecan, cherry, etc. I usually can say no thanks to these items, but Christmas is an entirely different ball game. Christmas is all about the cookies. When do you ever go to a holiday party and not see a holiday cookie platter? Buttery goodness goes right to my hips.So I am taking charge.  I am going to swap out my usual Christmas cookies with a cleaner version of my traditional faves!  Shall we start with the thumbprints?

So while doing my usual pursuing of blogs I came across this lovely holiday Christmas treat that is sure to satisfy the sweet tooth without going straight to the thighs.

Ingredients
1/2 cup Coconut Oil, Organic
1 cup Coconut Flour
4 Eggs, Pastured
1/2 cup Maple Syrup, Grade B
1/8 tsp Salt
1/2 cup Semisweet Chocolate Chips
1/4 cup Cocoa Powder, Organic
1/2 tsp Pure Vanilla Extract

Process
Preheat oven to 375 degrees.
In a medium sized bowl, combine eggs, melted coconut oil, maple syrup, vanilla extract and salt.
Blend all ingredients with a hand mixer until batter is fully mixed.
Form balls of dough, about the size of a tablespoon, and place on a parchment lined baking sheet.
Melt semi sweet chocolate chips over low heat in double boiler.
Press thumb into center of the dough balls.
Fill the center with the melted chocolate.

Bake cookies for 15 minutes.
