Clean Banana Nut Bread

Sometimes I am in need for a quick breakfast carbohydrate that I can pull out of the freezer and heat up.  These clean banana nut bread muffins are a great for just that. I make a whole batch of them and then I place them in the freezer. I will then pull them out for myself and my kids! They love them. I will heat them in the microwave and drizzle some honey or agave on them!

Ingredients

2 cups whole wheat unbleached pastry flour
2 tsp. baking soda
1 tsp. cinnamon
2 egg whites
1/2 cup honey
2 tbsp. olive or coconut oil
1/4 cup milk (non-fat) or almond milk
1/4 cup apple sauce (unsweetened)
2 ripe banana – smooshed with a fork
Nuts (optional – for sprinkling on top)

Directions

Preheat oven to 350 degrees F.

Step 1 – Mix all ingredients in a large bowl using an electric mixer. Make sure all ingredients get really well blended together.

Step 2 – Pour the batter into the muffin tin or muffin papers. Fill only half way.

Step 3 – Sprinkle nuts of your choice over the top and place in oven (Optional).

Step 4 – Bake for 20 minutes or until cooked through.

Eat and Enjoy!
