Honey Cranberry Bread

Today is Teacher Appreciation Day at Nick’s school, so we are celebrating the teachers by baking some delicious homemade bread.  I absolutely love the scent of homemade bread that fills the room, but I think even more than the scent is the taste of homemade cranberry bread- hot out of the oven.

One of my favorite things to do is trick people into thinking they’re cheating. I absolutely love when people ask for an indulgent recipe only to find out it’s actually good for them!  Winning!

Here’s my favorite homemade cranberry bread recipe.

Ingredients: 
1 1/2 cup white flour
1 cup whole wheat flour
1 tsp. baking soda
1 tsp baking powder
dash of cinnamon
1 cup Quaker oats
1 cup honey
1/3 cup plain Greek yogurt
2 eggs
1/2 cup almond milk
2 cups craisins

Mix dry ingredients together in a separate bowl.
Combine wet ingredients and slowly add the dry ingredients to this mixture.  Mix ingredients until most of the clumps have dissolved.  Slowly fold in your craisins (you can use cranberries for this recipe as well). 

Pour into a bread pan and bake at 350 degrees for 50-60 minutes.

You can also bake them in mini bread pans(found in most craft stores), wrap in saran, and attach a bow with the recipe!  It makes a super cute inexpensive gift.

  • 1/2 tsp. ground cinnamon
  • Dash of nutmeg
  • 1 cup quick cooking oats
  • 3/4 cup honey
  • 1/3 cup plain Greek yogurt
  • 2 eggs
  • 1/2 cup fat-free milk
  • 2 cups fresh cranberries (or 1 cup dried)
