Easy Summer Salsa!

Summer is FINALLY here!  Doesn’t it feel like it’s been THE absolute longest winter, EVER?!?!  One of my favorite things about summer is being able to leave the comfort foods for something a little lighter, but full of natural flavors.  Summer is all about fresh fruits and veggies and of course the dips that go with them.

I received this recipe about a year ago from a neighbor.  I couldn’t get over how easy it was yet it was still filled with robust flavors.  I decided to make it for the Memorial Day Picnic.  It’s an awesome recipe!  Enjoy anytime with your favorite pita, sweet potato, or tortilla chip, OR simply grab a spoon and leave the chip!


clean italian dressing

1 Red Pepper
1 Green Pepper
3 Large Roma Tomatoes
1 Red Onion 
1 can Hominy
1 can Black Eye Peas
1 jar of Italian dressing  (I use Drew’s all natural)

1.  Chop veggies.
2.  Drain hominy and black eye peas.  I rinse in cold water as well.
3. Let marinate overnight.  Drain remaining dressing.
4. Enjoy! 

This also is a great addition for your favorite chicken or fish dinner.
