When Mike and I got married, this recipe was given to me by a close family friend.  We ate it, no joke, once a week.  But when I started to change our diet and began eating clean, I thought for sure it meant we had to permanently kiss this one goodbye. But after some research, I’ve found a way to make it clean and dare I say it is even better. It’s perfect for parties too!

Mix together
6 tbsp Greek yogurt
2 cups of mushrooms (I usually saute them first)
1 16 ounce jar of salsa
2 cups of brown rice
1/2 lb of chicken, cooked and diced

Combine all ingredients.  Pam 13×9 pan and bake at 350 for 25-35  minutes.

You can also add other ingredients such as:  low fat cheddar cheese, onion, corn black, beans,  diced chiles or jalapenos.

I serve this with whole wheat taco chips crunched over my serving.
