Hearty Beef and Butternut Squash Stew #21DFX Approved

I cannot even begin to tell you how cold it's been in Pittsburgh! Kiddos have been off school for days because of the freezing temps! To me, there are few things more soul satisfying than some serious comfort food.

Mom's homemade broccoli cheddar soup in a nice bread bowl?  Yes, please!  However, I am making every effort to not give into these cheats throughout my 21 Day Fix Journey, so instead of focusing on what I cannot have, I am focusing on satisfying my cravings for soul food with recipes like this one!

I will be honest...
I didn't think it looked that appealing.

Clean Comfort Food!

But this is an absolute crowd pleaser!

*Note:  I did make some changes from the original recipe.  What can I say, when I want home cooking, I have to add a little Ursta to the mix!

This recipe, if you are following the #21DF or #21DFX is:

1 GREEN

4 garlic cloves
2 medium diced tomatoes
1 cup low sodium beef broth
1 bay leaf (I did not have this available)
