Egg Muffins: #21DFX Approved

Together we will eliminate the crave, and these egg muffins are a great start to your morning eating plan.

Following the 21 Day Fix or Whole30?  This is the best recipe for your morning on the go routine!

For this recipe you will use:
One Green Container
One Red Container
Makes 6 servings, 2 vegetable egg cups each.

Ingredients

12 large eggs
1 (10 oz) bag of finely chopped spinach
1 medium bell pepper
2 green onions
sea salt, black pepper, and onion to taste

Directions:

1. Heat over to 375
2. Lightly coat 12 cup muffin pan with spray
3. Place eggs in large bowl; whisk to blend. Season with salt and pepper if desired.
4. Add spinach, bell pepper and onions; mix well.
5. Evenly pour egg mixture into the muffin cups.
6. Bake for 20 minutes, or until toothpick is inserted comes out clean
*You can add goat cheese, feta cheese, mozzarrella cheese, cheddar or Parmesan.  Please add a BLUE container if you do!

Beachbody CEO Cark Daikeler recently announced that Beachbody and MYX Fitness will be merging! This is huge news because along with Beachbody’s new Beachbody On Demand Interactive, or Bodi, platform, you will now be able to stream live cylcling workouts on the MYX Bike from MYX Fitness. Former Peleton instructor Jennifer Jacobs is Beachbody’s newest Super Trainer, who will be leading the cycling programs!

    If you actually mix the ingredients in these proportions, there is much too much spinach busting out for a small amount of egg. You're better off halving the veggies.

    Thanks for the input! That is a great idea. We love the vegetables loaded in there. That's why we portioned it the way we did!
