Egg Muffins: #21DFX Approved

Clean and Tasty Snack!
Following the 21 Day Fix or Whole30?  This is the best recipe for your morning on the go routine!

These also go great with the new workout The Shift Shop!  I ate these all the time while completing it.  Here is my The Shift Shop Workout Review


For this recipe you will use:
One Green Container
One Red Container
Makes 6 servings, 2 vegetable egg cups each.

Ingredients
12 large eggs
1 (10 oz) bag of finely chopped spinach
1 medium bell pepper
2 green onions
sea salt, black pepper, and onion to taste

Directions:
1. Heat over to 375
2. Lightly coat 12 cup muffin pan with spray
3. Place eggs in large bowl; whisk to blend. Season with salt and pepper if desired.
4. Add spinach, bell pepper and onions; mix well.
5. Evenly pour egg mixture into the muffin cups.
6. Bake for 20 minutes, or until toothpick is inserted comes out clean

*You can add goat cheese, feta cheese, mozzarrella cheese, cheddar or Parmesan.  Please add a BLUE container if you do!

Are your children picky eaters?
Like most recipes that have any green in them, my children turn up their noses.   1. If you actually mix the ingredients in these proportions, there is much too much spinach busting out for a small amount of egg. You're better off halving the veggies.

    1. Thanks for the input! That is a great idea. We love the vegetables loaded in there. That's why we portioned it the way we did!
