6 tbsp Greek yogurt
2 cups of mushrooms (I usually saute them first)
1 16 ounce jar of salsa
2 cups of brown rice
1/2 lb of chicken, cooked and diced
Combine all ingredients. Pam 13x9 pan and bake at 350 for 25-35 minutes.
You can also add other ingredients such as: low fat cheddar cheese, onion, corn black, beans, diced chiles or jalapenos.
I serve this with whole wheat taco chips crunched over my serving.
