Chicken Fiesta Sandwich

Easiest Dinner Ever! 

So back in once upon a time, time.  I worked at Eat n' Park.  Now this was back in the day, and I must admit that when Mike and I headed there the other day, the menu was completely different aside from a 1,086 calorie Superburger.

Insane right!?!?!  1,086 calories for one burger and that's not even including those greasy fries. They had a good selection of low calorie dinner options, 


Well it got me thinking of one of my classic favorites.  The Chicken Fiesta Sandwich. 

So here's how I cleaned it up.  And let me tell you, it's AMAZING!!!!!!!


1 chicken breast (we spiced with chili powder and a little sea salt)
and top with any and all of the following:

  • jalapenos
  • tomatoes
  • onion
  • lettuce
  • salsa
  • a dollop of Greek yogurt.  


That's it.  I added some brown rice chips for a little crunch and it was delicious!

You can add other items like reduced fat Mexican cheese, green chiles, black beans, and corn too!


Oh and those smiley face cookies, in case you were wondering, 250 calories!!!!
